Practically Foolproof Fresh Fig Cake in your Instant Pot

After some experimentation, I've found the perfect way to use fresh figs! I pick so many of them in such a short period of time but I know I'm not going to can or dry them. This recipe is really forgiving - you can use figs that are bloated or just ripe. The problem with figs is that the water content varies so much that the recipe can't be exact until you get most of the water so that is the first step.

1. Wash the figs and snip the stems off with scissors. Cook in your instant pot for 8 minutes

Wash your figs, cut off the stems with scissors, and place in your instant pot. Do not add anything else.

Set your instant pot for 8 minutes. You can release the pressure or let it cool naturally. Drain out all the water you can, let it sit then drain more. If you don't have an instant pot, you can skip this step.

Add about 3/4 cup sugar for every 2 cups of figs you started with, mash figs, and cook. You can slow cook in your instant pot for hours, saute and stir for 20-30 minutes, or cook on low on the stovetop.
