Key Lime Pie Pops
Recipe
1 Frozen Key Lime Pie - I used Edward's
Dark chocolate - I used 1 bag Hersheys dark baking chips
2 1/2 T Crisco shortening
Popsicle sticks
Melt 1 bag of chips and about 2 1/2 tablespoons shortening in a double boiler over boiling water. Don't substitute butter, and don't let water get into the chocolate. Stir until smooth. I have done this in a microwave, but the double boiler works best.
Keeping pie very frozen, take out and cut into 12 pieces. (These seem small but it is very rich and this gives a good shell/pie ratio that helps keep it together. I used a store brand with a really dense crust - a beautiful homemade or bakery pie would likely fall apart.)
Cut a small slot in the crust and insert the popsicle stick. If you aren't working quickly, put back in freezer.
Hold the popsicle over the double boiler and use a ladle to coat it. Be sure and get chocolate around the opening where the stick is inserted so it holds together.
Place on a baking sheet with a silicone mat, baking paper, etc. and refreeze! Try to forget about them until your company comes.
Makes 12 pops!
